I like doing many things after work. Cooking is not one of them. Years ago when I started working after having kids, I remember thinking while driving home, I wish I had a full-time cook. Oh, how I wish dinner was waiting for me.
I never got a full-time cook because I can’t afford it and realistically that wouldn’t happen in my world. I’m the cook!
Now I visualize what I’m going to cook and wake up early to make it. I wake up early anyway so I can have some quiet time before the rest of the family hovers around in the kitchen and the day begins for us all. Besides the type of meals, I invent are quick and easy. It looks like it took time to make, but it didn’t.
Prep Time 10 min. Cooking Time 15 min. Serves four people
Ingredients
You need some kind of blending machine.
1 medium jar of tomato sauce. I used a pizza flavor. Any flavor works.
Fresh tomatoes work well too. (I recommend 5 juicy ones)
A few sprigs of cilantro leaves
1 green chilly (optional)
2 chicken breasts cubed & washed
1 onion chopped
½ cup cooking cream
½ Tsp. of each spice- whatever spices you like. I used chili powder, chicken curry powder, cumin powder, fresh ginger & garlic paste
Method
Add all the ingredients into the blender and mix, except cooking cream.
Heat the pan add chicken pieces and braise for 10 minutes on medium heat
Add mix from blender
Cook for another 5 minutes. Add some water to keep the chicken from drying out.
Lastly, add the cooking cream and stir well. You can add more cream if you like it creamier.
Additional
I change this recipe at times and add vegetables to the chicken
I substitute the chicken for shrimp or fish
Served with white rice or pasta! YUMMY
