I remember cold winter days; mum would either make a hearty soup for us to enjoy or one of the house favorites, “Cottage Pie”.
Growing up in a diverse country like South Africa, every household was known for inheriting recipes from Generations far from South Africa.
Many South Africans were born from other countries, and because of history, South Africa became their homes.
“Cottage Pie” became a favorite dish in many homes because it was affordable to make and didn’t require a lot of cooking time. Even though I may not live in South Africa anymore, I still remember the smell of minced meat baking in mum’s kitchen.
It is a simple and easy dish to prepare. It will amaze those who eat it!
Preparation Time – 15 minutes
Ingredients
1 kg Minced Meat – Beef or lamb
2 cups frozen vegetables or fresh mixed vegetables of your choice cut into small pieces
4 Potatoes (Boiled and mashed)
1 large Onion- Chopped
2tsp Olive Oil
1 cup of water
1 tsp baking powder
1 cube butter
1 cup warm milk
1 egg
2 or 3 bunches of spinach leaves- Washed and cut up
Spices
1 tsp fresh ginger
1 tsp- fresh garlic
½ tsp curry powder
¼ tsp salt
¼ tsp Chilli powder
¼ tsp oregano
¼ Turmeric Powder
Pinch black pepper
Mashed Potato Recipe & Method
Boil potatoes until soft.
Mash Potatoes and add butter, salt, and pepper.
Add 1 cup warm milk and mix well until light and fluffy
Method
Fry the onion in olive oil until golden brown. Add washed minced meat to the pot with all the spices. Mix well. Add water and simmer on low heat for 5 minutes. Add all the vegetables to the pot and stir well. Mix in the cleaned and cut spinach. Cook on low heat for 10 minutes.
Remove food from the pot and place it in an oven proof dish. Spread the mashed potato on the top evenly.
Lastly, beat an egg and cover the mash with the raw egg — Bake at 180 degrees for 10 minutes. I would recommend baking it until the egg turns brown because all oven temperatures vary.
Optional- If you don’t mind the extra carbs……
Serve on a bed of white steamed rice
It is common to eat it just on its own, but my mum served it with rice, and it just tasted better.
