A delicious treasure from my past!!
I am a recipe collector. I still have all my written pages of recipes that I have collected like treasures over the years. Some pages are stained with the grease from oil while trying to read and measure at the same time. My recipes have become soul food for my friends and family. Some I have adapted and added things here and there that I preferred. Other recipes I am still trying to master. There are so many recipes that I would love to share with you, and I hope that you can adapt them to make them your own. I hope that the recipes become your treasures and soul food for your family and friends.
A few years ago I was sitting in a beautiful living room overlooking the Arabian Gulf. My friend who was known for her tasty baking skills invited me for tea. Amazed that I was living in the United Arab Emirates, everything was always amazing to me. The views, the food, and people. I stayed amazed. Well, there I was having a lovely cup of tea and being served the most delicious homemade bran muffins. She served it with red jam and whipped cream. I immediately knew that I had to have the recipe. I have the habit of keeping a small book and pen in my bag. She was gracious enough to share the recipe. I had to know where she got the recipe herself and if I could perhaps find more muffin recipes. She told me that a friend of a friend she knew years ago gave it to her. The lady’s name was Joanna. Well, I never got to see a picture of Joanna, but I decided to call the muffins Joanna. Oddly, enough the recipe had no name; she was only calling them Bran muffins. Once I took my first bite, mmm…they became so much more than just a muffin. It was the beginning of a long relationship with this nameless muffin. I should warn you that Joanna’s muffins are addictive and failproof. If you don’t have a baking bone in you, this will surely impress your family.

Recipe Ingredients & Method
2 ½ cups Nutty Wheat flour
2 cups Bran (I used a brand from South Africa, but you can use a similar alternative )
1 tsp salt
2tsp bicarbonate of soda
1 ½ cup brown sugar (if brown is too expensive or unavailable white fine sugar is good enough)
250 grams fruit, nuts (whatever you prefer) I used cranberries and walnuts. Sometimes I use raisins or chopped dates. Make it your own. It will still bake easily.
2 cups milk (I used whole or skimmed, low fat is also good enough)
½ cup sunflower oil
Method
Mix all ingredients. There is no particular order. Spoon a tablespoon full into a cupcake holder. Bake at 180 degrees Celsius (350 F)
Serving Suggestion
Slice muffins in half. Add various toppings that you prefer
Cheese
Flavored Jams – Strawberries and blueberries are my personal favorites
Top with whipped fresh cream
Alternatively eat it plain with a cup of coffee or tea.
This is a wonderful healthy recipe for the whole family to enjoy. My son loves it. I love it because it helps with digestion.
