Easy Meat & Vegetable Weekend Dish
Do you feel lazy to cook on weekends? Maybe or maybe not, everyone likes to have a day off from the pots and pans. I usually try to make easy & no hassle meals so that I can save money on take outs and keep my family.
Prep Time: 10 minutes
Cooking Time: 1 hour
Serves: 2-4 people
Ingredients
- 1 kg or 2.20 pounds meat
- 1 large onion
- 1 large potato
- 1 large sweet potato
- Mixed red, green, yellow, orange peppers
- Spices- Black pepper, Adobo – all-purpose seasoning, salt is optional
Method
- Chop onions and sauté in olive oil until yellowish brown.
- Add cleaned and washed meat to the pot.
- Add Spices and water to cover halve of meat.
- Simmer on medium heat for 30 minutes on one side and turn meat and simmer for another 30 minutes.
- When water is reduced in the pot stir the meat and onions.
- Add the sweet potato and potato and add more water. Leave to simmer until potatoes are soft.
- Lastly add peppers and simmer for another 5 minutes. Keep an eye on meat to prevent the meat from burning. A crock can be used for faster cooking.
