When I eat jam tarts, I think of the days when I was younger and would help my mum in the kitchen. Baking was such a treat for the family. Desserts were not bought from the bakery but instead made at home for our family to enjoy.
The pride of serving a delicious homemade tart brought delight to everyone. Recipes were perfected over the years and passed down from generation to generation.

Preparation Time – 30 minutes
Ingredients
125 grams soft butter
2 tbsp cooking oil
1 beaten egg
2 tsp baking powder
2 tbsp castor sugar
1/2 tsp vanilla essence
2 cups flour
Apricot Jam for spreading
Coconut syrup (Boil 1.5 cup water, 1 cup sugar, and 1 cup desiccated coconut )
Method
Cream butter and sugar until smooth.
Add cooking oil and vanilla essence. Beat well
Lastly, add sifted flour and baking powder and baking powder.
Mix all together into a dough and knead well.
Roll dough out with a rolling pin.
Cut dough into small circles and place into a muffin pan.
Fill cups with half jam and coconut
Bake in 180 degrees Celsius for 25 minutes
When you take it out of the oven. Dust with icing sugar.
